Create our Vicarage lemon breakfast 'ice-cream' at home

More like a frozen smoothie, absolutely fantastic at getting the day started with a boost of vitamin C


We put this on the specials menu sometimes in the summer, when we can source some really good quality lemons.



Blended creamy lemon frozen treat at the bottom, homemade granola on top, topped with some more fruit.


I'm not going to put our granola recipe in here, that will come in a different blog.


This is not a quick recipe, it involves at least an hour of soaking, and the time to freeze. But...you can make up a batch and grab it out of the freezer as you want to eat it


 

Ingredients

Food

  • 3 good quality large ripe lemons

  • 1 tin coconut milk

  • 2 glugs of maple syrup

  • 1 cup chia

  • 1/2 cup Oat milk

Tools

  • Blender

  • Mixer (I use a Kitchenaid but a hand mixer will do)

  • Juicer

  • Ice-cube trays

Step 1: Let’s Get Started


Take the rind off the lemons, try your best not to let too much juice escape. I do it over a large bowl so I don't lose any of that delicious lemon juice.

Put the lemons in the juicer and blitz, drain the juice into a mixing bowl,


Step 2: Make the 'Ice-cream' mix

Add the tin of coconut milk to the mixing bowl. The fat and the milk will be separate, you need both and it'll blend together smoothly.

Add a glug of maple syrup. This is really to taste, it depends on your lemons as to how much you need, but it should still be left with some tartness. You can always add more later.

Use your mixer to combine the ingredients.

Add the chia, and lightly stir into the mix.

Leave the chia to expand for at least an hour (we leave ours overnight to fully expand)

Your mix should now be a lot firmer


Step 3: Freeze


We portion ours out into ice-cube trays for a few reasons. It freezes quickly, reduces the amount of ice crystals that will form in the mix, and it makes it a lot easier to portion and blend when you want to use it.


Step 4: Serve & Enjoy


Take a handful of the cubes of mixture, and bob in a blender, add a splash of oat milk to help loosen. Blend until smooth.

Add the blended mix to a glass, throw a handful of granola on top, and your choice of fruit topping, we like blueberries for the extra Vitamin C & K boost.
